We have been growing Pak Choi (or Bok Choy or Pok Choi) in the gardens for a few years, and have been impressed with how quickly they can grow, especially overwinter. They survived a deep freeze really well, and grew faster in the mild Irish winter weather than most of the other crops we tried.
