And Joe almost has the entire Dark Souls figured out by the 14 minute mark, Dark Souls games are not hack and slash, they're rhythm games. Find the rhythm of the enemy and you can beat them.

This series is probably going to improve Joe and teach him some kind of patience and strategy

Wow, Joe got gud pretty quick. No way I would have beaten the crystal lizard at the very start of my first Souls playthrough. I'd have given it maybe 5 tries before going the other way for sure.That's some dedication right there.

I know I've heard Michael mentioning this series for a while, so I'm hoping that means they filmed a lot of it, but I really hope this series goes all the way to the finish. This was really fun. Dark Souls games are just uniquely watchable in a way that no other series has ever matched. And Joe popped off.

Maaan I got scammed, Gundyr and the Master dude were so much more aggressive when I was playing. Also hoping future episodes are even longer, the struggle is my favourite part of watching Dark Souls.

At 27:03, I believe that is a parry specific to the katana.
Iirc, the NPCs in Dark Souls 3 become gravestones or spirits or whatever when they die, allowing you to still use their services, but at a penalty. It also breaks their questline if they have one going.
