According to my HZD guidebook, you press the triangle button to dismount. Not sure what it would be on other consoles.
The audio was glitched for me too. Helis's dialog just cut out at the end of that cut scene. Rest of it was fine, if a little muted
It seems best to complete the dlc before the final battle, However if you don't want to do that just keep a backup save before the final battle so you can redo it after the dlc and experience the best finally for this game.
It looks like you forgot already that the blaze canisters on snapmaws are protected now, and you need to tear off the armor to exploit that weakness.
